It's true. UC Davis maintains a herd of cows with permanent holes cut in the side for research purposes. I have been hearing this for years, but had yet been able to find any indication of it online. Thanks Wikipedia!
Fun fact: Have actually seen one of these cows up close and personal at UC Davis. It's impressive, however I passed on sticking my hand in: the lady in line before me was hit by a jet of digestive products from an ill-timed stomach contraction.
